Hogget kitchen was borne out of the philosohphy of chef Tervor Perkins. He believes that ingredients should be allowed to 'speak' for them elves and creates all the dishes with this in mind. Hogget kitchen has a nose to tail approach and local, seasonal ingredients are key.
All the pickling, bottling, charcuterie, smoking, brining and more is also done by hand in-house - skills we are passing on to our staff as we work preserving the techniques for future generations of chefs.
